Tasting
To the eye: fuchsia and purple shades.
To the nose: Aromatic on cherry, spices: pink peppercorn and Sichuan pepper.
On the palate: A supple attack with a nice vegetal hints. Slight tannic structure
About technic
De-stemming with no crushing in order to obtain a light vinification (minimal extraction of tannins and colour), 10 days fermentation between 20 and 25°C .4 months aging process.
