Mussels on a bed of Cognac and Pineau

Preparation : 30 – 45 mn / Cooking: 15 mn

Ingredients for 2 persons :
– 2 litres of mussels (± 1,6 kg)
– A big bunch of parsley
– 20 cl of wine Colombard
– 5 cl of white Pineau of Charente
– 5 cl of Cognac
– 10 cl of fluid sour cream
– 1 lemon
– Salt, pepper from the mill, 1 knob of butter, 4 shallots

Soak mussels in some salt water 15 mn. All this time peel and chop shallots. Wash and chop the parsley. To clean mussels : one by one wash them several times in big water until they are very clean.

Melt a knob of butter in a pan.

Throw it shallots and stir them for 3-4 mn. Then add mussels.

Salt and pepper. Add the parsley.
